Vegan Potato Salad

Ingredients
3 russet potatoes1/2 c Vegenaise1/4 c Tofutti Sour Creamchopped green peppers (to your liking)chopped onionsScallionssalt and pepper to taste
Directions
Chop the potatoes into large chunks and boil for about 10 minutes till soft. Boil the peppers for a few minutes, add the onions at the end. Let the potatoes cool, cut into bite size pieces, and mix all the ingredients together. If it cools in the fridge for awhile, the flavors mesh together and it tastes really good!
