8 big potatoescollard greens ( as many as desired)1 carrot1/2 an onion1 clove garlic1 portuguese sausage 1 tablespoon olive oilsalt and pepper to taste
bring potatoes, carrot, onion, garlic olive oil to a boil..... overcook them if you please.
put in blender along with a bit of soup water process until very thin...
put back in pot with the soupwater.
in a seperate pot boil the portuguese sausage.
cut into small pieces, add to soup.
chop the collard greens very finely and pour teawater over them to clean them.
add them to soup...
salt and pepper to taste.
The soup is ready when the collard greens are cooked....
This will make 6 to 8 servings
