Tomato, Cucumber & Mozzarella Salad with Balsamic Vinegar

Ingredients
3 vine-ripened or roma tomatoes, cut into wedges or chopped1/2 large cucumber, peeled and sliced into 1/4" slices2 ounces mozzarella cheese, cut into 1/2" cubes or smaller2 tablespoons extra virgin olive oil4 tablespoons balsamic vinegar1 teaspoon kosher salt
Directions
Makes 4 servings, about 2/3 cup each

Mix all ingredients together in a bowl. Cover and refrigerate at least one hour, but it is better if it is left to marinate overnight.
