1 c Bob's Red Mill all purpose gluten-free flour1/8 tsp salt1/2 c Irish rolled oats1/3 c packed brown sugarScant 1/4 tsp baking soda2 medium eggsFlavoring as desired. I add none unless I am using this as a savory bread.About 1/2 c water--enough to make the batter just pourable.2 tsp apple-cider vinegar2 tsp oil
I take my 8" cast iron skillet and place it in the pre-heating over--375 degrees F. Then distribute 2 tsp oil over the bottom of the skillet and, once the batter is in the skillet, turn the oven down to 325 F.
Stir all of the dry ingredients together. Stir or whisk the wet ingredients together. And stir all together briefly.
Bake about 30 minutes, until the middle is set.. Then leave in closed over another 20-30 minutes to toast-up nicely. 8 servings
