SAUCE:0.5 cup Ketchup4 tsp Soy Sauce0.5tsp Salt3tbsp Sugar2tbsp Worcestershire Sauce1.5tsp Sesame Oil0.25tsp Cayenne Pepper0.5cup Chicken BrothREST:2tbsp Cornstarch0.5tsp Sugar0.25tsp Salt18 oz Protein (Chicken, shrimp, tofu, pork, etc)0.25cup Olive Oil2-3tbsp Minced Fresh Ginger1 clove Minced Fresh Garlic1 small Onion2 Red peppers2 carrots2 cups broccoli.snow peas1.5 Cups cahsewsOptional: Sprinkling of sesame seeds, toasted
Combine sauce ingredients and set aside. In a bowl, combine cornstarch, sugar and salt. Add protein and toss. Heat wok or frying pan to highest heat. Add oil. Heat to hot, not smoking. Add protein, ginger, garlic and onion. Stir until protein is cooked (about 1 min). Add peppers and carrots. Stir 2-3 mins. Add broccoli and sauce. Cook until sauce comes to a boil. Add cashews and sprinkle with sesame seeds. Serve immediately over rice or other whole grain. Serves 6.
