Slow Cooker Indian Chicken Curry

Ingredients
2 cups onion, chopped5 cloves garlic, minced2 lbs(approx) boneless skinless chicken breast, cut into bite size pieces6 tbsp curry powder2 tsp ground cinnamon2 tsp paprika2 bay leaves1 tsp ground ginger1 tsp white sugar1 tsp cayenne pepper2 tbsp Sriracha Chili Sauce, or other hot sauceJuice of 1/2 a lemon1.5 cups lite coconut milk2 cups plain nonfat yogurt2 tbsp tomato paste1 tsp salt, or to taste
Directions
Chop onion & garlic. Cut chicken into bite size pieces. Add all ingredients to slow cooker. Cook on low for 6-8 hours. Makes 8 servings.


Serve with Basmati Rice and Naan if desired.

    Wish it wasn't as watery as it turned out to be... maybe need less coconut milk and add the yogurt last is my recommendation. Will try it again with my tweaks and see how it turns out - 10/19/11
