Black Bean Quinoa Salad

Ingredients
1 Large Yellow Bell Pepper1 Large Orange Bell Pepper1 Large Red Bell Pepper1 Large Onion (use your favorite varietal)1 cup dry quinoa1 14.5 oz can of black beans6 oz. fat free feta cheese2 Tablespoons of olive oil
Directions
1. Rinse and drain the quinoa. Boil two cups of water in a 1 quart saucepan and reduce to medium heat and simmer quinoa for 12-15 minutes until all water is evaporated.
2. Dice and saute in a water bath the peppers and onions. Add in balsamic vinegar or spices to suite your taste. Cook for 7-10 minutes--do not overcook as you do not want mushy veggies!
3. Add the quinoa mixture to the vegetables and toss in a large bowl.
4. Add in the can of beans, feta cheese, and olive oil.
5. Toss all together and refrigerate.
6. Can be served hot or cold. Delicious in wraps for lunch!
