Lentil and veg soup

Ingredients
80g dried red lentils2 medium carrots, diced100g potato, diced1 onion, diced2 vegetable stock cubesJuice of 1 lemon
Directions
Spray low cal cooking oil onto a pan. Add the onion and stir for about 2 minutes, and then add the lentils, carrots and potato, and stir again for another 2 minutes. Add the stock cubes with 1.5 pints of water, bring to the boil, and then simmer for about 20 minutes, stirring a few times.
Leave the soup chunky, and add the lemon juice with a bit of black pepper and enjoy.
