Vegan Peanut Butter & Maple Cookies

1/2 cup whole wheat flour1/4 cup ground flax seed1/2 cup oats1/2 cup brown sugar1 TSP baking powder1/2 TSP baking soda1/4 TSP salt1 TSP vanilla extract2 TBS canola oil1 TBS unsweetened applesauce1/4 cup maple syrup1/4 cup organic creamy peanut buttercoarse organic cane sugar to sprinkle on top of each cookie
Pre-heat oven to 325 degrees. Mix all ingredients together and then drop by rounded TBS onto a greased cookie sheet. Smash down with a fork and sprinkle each cookie with sugar. You may find you need to mold the edges a little.
Bake 10-12 minutes and cool for 15 minutes before serving. I found I got 13 cookies out of this but if you make them smaller you could probably get 2 dozen.
