Yellow Curry Soup

1.5 cans of coconut milk3 cups vegetable stock3-4 tbsp yellow curry paste1 large onion2 heads cauliflower5-6 large stalks celery4 chicken breasts, cut into piecesHandful of fresh cilantroFresh or dried basilSalt and pepper
Add chopped onion to vegetable broth and cook until broth boils. Chop up cauliflower and celery, add to broth, and cook until cauliflower starts to soften. Add coconut milk, chicken, curry paste, and basil. Cook for 20 minutes. Add cilantro, and salt and pepper to taste. Cook a further 10 or so minutes
None of this is really accurate. I don't remember exact timing of the recipe, but it tastes damn good and it's filling so give it a shot
