Lentil Tacos

Ingredients
1 Lb dry lentils3 Tbsp or 1 package taco seasoning4 cups low sodium chicken broth
Directions
Rinse lentils and place in deep skillet. Turn heat on medium and stir lentils for 2 minutes. Add taco seasoning and chicken broth and bring to boil. Reduce heat and simmer for 30 minutes or until liquid is mostly absorbed. Serve with tortillas/taco shell and your favorite toppings for a meatless dish. Enjoy!
