Mexican Zucchini fritata

1 whole large egg2 egg whites3/4 C zucchini, diced1 "spray" of olive oil cooking spray1/8 avocado (if desired)2 Tbs salsa (calories will vary with brand)Chipotle seasoning to taste
Spray non-stick omelet pan with cooking spray, heat over medium heat.
Add zucchini and season with Chipotle seasoning to taste.
While zucchini cooks, beat egg + egg whites
When zucchini is done to desired tenderness (lightly browned is very tasty), add eggs.
Use preferred technique for omelet, frittata, or scrambled eggs.
Top with sliced avocado and salsa.
