Ingredients

    1 wheat tortilla
    1/4 cup refried beans
    1/8 cup shredded cheese, Mexican blend
    2 eggs
    1 tbsp salsa or diced tomato (optional)

Directions

Pan fry eggs until yolks are solid (cooked "over-hard").

Take tortilla, spread refried beans in a line down the center. Add salsa or tomato if desired, and sprinkle with cheese. Microwave on High for approx. 30-45 seconds.

Add eggs and roll up burrito style.

Makes 1 burrito.

    Very Good
    A variation of this is one of my favourite meals. I make the egg sunny side up with a soft yolk, use that to top a bowl of refried beans, with cheese and salsa over that. Tortilla on the side to dip it out. - 8/24/19
