Spelt is one of my favorite flours because it is high in fiber and protein while being good for those with wheat sensativities. This is what I use as a pancake base and I use only organic ingredients. I usualy add blueberries, strawberries, or ground flaxseed for variety. I also experiment with different extracts like vanilla, almond, or orange. To give it a more sweet flavor, add some stevia for even more fiber and no calories or artificial sweetner yuckiness.

This has the taast of french toast. Goal is to yield 8 crepes, but that seems pretty tricky and time consuming to accomplish without correct tools (skills?).

I aim for 2-4 pancakes. Pretty tasty and filling. Still need your veggies though.

A delicious waffle made with a grain called spelt. Spelt is available at health food stores and major grocery chains in the health sections. Some people who are sensitive to wheat (like me) can have spelt, but if you are gluten intolerant you will not be able to have spelt as it does have gluten.
