Introduction

This is a filling and tasty breakfast sandwich. It has lots of flavor for not too many calories. It is also relatively quick to make, especially if you keep chopped green pepper on hand. Ingredients

    1 English muffin
    1/4 cup egg substitute (Egg Beaters)
    1/4 cup finely chopped Green Bell Pepper
    1 tbsp Bacon Bits (optional)
    Dash of Salt
    Dash of Pepper
    PAM (or other vegetable oil spray for spritzing pan)

Directions

Toast english muffin.
Spray small frying pan with PAM and heat to med-low. Add green pepper and saute until slightly softened. Add egg substitute, stirring lightly while adding to disperse green pepper thoroughly. Sprinkle with bacon bits, salt, and pepper. Once egg is set on underside, flip over to cook though. Use spatula to cut into muffin size pieces and place on toasted muffin.

    We found a microwavable container about the shape of an english muffin, put all the ingredients in there and microwave while muffin is toasting and voila! in about 2 minute you have a quick easy breakfast. - 10/22/08

    This recipe saved my morning! I had a bag of frozen bell peppers (green, yellow and red) in the freezer just waiting to be used. This was perfect. Sprinkled a touch of grated cheese on top as well. Simple, very quick, easy cleanup, and works well on the go. Thanks!! - 10/2/08
