Ingredients

    1 1/2 cups Egg Substitute
    2 tablespoons lowfat milk
    1 tablespoon chopped fresh dill
    1 teaspoon kosher salt
    Ground black pepper to taste
    2 tablespoons chopped chives
    2 ounces lowfat cream cheese
    2 ounces smoked salmon
    2 teasppons olive oil

Directions

Move rack in oven to the center and preheat oven to 375 degrees.

Whisk the eggs, milk, dill, salt, pepper, and chives together in a bowl. Separate the cream cheese into small clumps by using two spoons or your fingers. Fold the cream cheese and salmon into the egg mixture.

Heat the oil in a medium non-stick skillet over medium-low heat. Pour the egg mixture into the skillet, and stir lightly to make sure the fillings are evenly arranged in the pan. Cook until the bottom is set, but not brown, about 2 minutes. Transfer the skillet to the oven and bake until the tops is set, about 8 minutes. Remove from the oven, cover, and set aside for 5 minutes.

Invert the frittata onto a large plate. Cut into wedges and serve warm or at room temperature.

    I made this with a variation. I use a Grilled Salmon Fillet and Made a topping with Grilled Onoin , Then Adding Tomato, Letting it Cool and the Adding Some Fat Free Cream Cheese and Spice. I Put this Topping on Top of the Salmon and Placed it under the Broiler untill just bubbly...Yum..Very Healthy - 1/8/08

    I hate cream cheese so I didn't use that. Used ranch dressing lightly and some swiss cheese! Added tomato & red onion also! - 1/12/21

    I really enjoyed this. I had to make it with real eggs, and cook slowly on top of the stove, but it tasted great! My husband wasn't as fond of it, but that's nothing new. - 6/5/09

    I didn't have smoked salmon in the house so I used canned crab meat. Then I added about 1/3 each of diced onion and green pepper. Very yummy. We had it for dinner with a salad & cranberry sauce and I had it again for breakfast with toast and turkey sausage. - 3/26/08
