Introduction

Spelt is one of my favorite flours because it is high in fiber and protein while being good for those with wheat sensativities. This is what I use as a pancake base and I use only organic ingredients. I usualy add blueberries, strawberries, or ground flaxseed for variety. I also experiment with different extracts like vanilla, almond, or orange. To give it a more sweet flavor, add some stevia for even more fiber and no calories or artificial sweetner yuckiness. Ingredients

    Arrowhead Mills Organic spelt flour, 1.5 cup
    Milk, nonfat, 1 cup
    Baking Powder, 1 tsp
    Omega Egg, fresh, 1 extra large
    Egg white, 1 serving

Directions

Mix all the ingredients together.
Heat a large frying pan to medium high and coat with your prefered cooking spray/oil/butter.
Spoon out 1/2 cup of the batter into the skillet and filp the pancake when bubbles start to form on top.
This makes 6 huge pancakes - experiment and enjoy!

    Incredible!
    I love the ease of these pancakes. They are thin & cook quickly. I have added hersheys dark coco powder to make chocolate ones. I usually cut recipe back to make for one. 1/4 cup spelt to 1/3 cup almond milk/ 2 tabs egg beaters. Seems to work well. I like Mighty nut powdered peanut butter with these - 1/11/18

    Very Good
    Reduced flour to 1 cup, reduced milk to 2/3cup, and didn't put in egg white (there's only 2 of us here to feed!)

    Finally! I have been searching for days and finally found a recipe for spelt pancakes that my husband can eat. He is on a Candida diet. I put cranberries in them. Since I never found a muffin recipe for him, I was wondering if I could make muffins using this recipe???? - 9/5/10
