This is in my Crockpot (just a name-brand slow-cooker) right now and I just thought I'd share this recipe with anyone who'd like to try it. :) Buffalo is lean red meat and much better for you than beef, but with a very similar flavor. Just additional information is I have a 5Qt Crockpot, but this recipe's measurements can be cut in half (use entire egg though) to accommodate a smaller slow-cooker.
This recipe is found in the Eat-clean diet cookbook by Tosca Reno. Yogurt Cheese does a superb job of holding this loaf together while adding valuable protein and tangy flavor.
A hodgepodge of various recipes I've used.Depending on your tastes, you may choose to add oregano, anchos, and or cumin to the chili powder. A touch of strong black coffee can give in interesting depth to the stock.
I make this and portion out for me and my husband's lunches all week. He likes a side of green beans and I put mine on top of a spinach salad. You can also put this in an Ezekial wrap if you want a "sloppy joe" experience!
