Introduction

Great for those of us that don't eat or don't like beans. Has little kick, but not too spicy even for children to eat. Garnish with avocado, cilantro and a squeeze of lime juice. Great for those of us that don't eat or don't like beans. Has little kick, but not too spicy even for children to eat. Garnish with avocado, cilantro and a squeeze of lime juice.

Ingredients

    bison
    bacon
    onion
    garlic
    unsweetened cocoa powder
    chili powder
    dried oregano
    paprikacan finely chopped tomatoes
    peeled carrots
    1.5 cups water or beef broth
    1 tbsp apple cider vinegar

Directions

slightly cook bacon to render out fat. add chopped onion and stire into bacon. cook until just starting to get translucent. add bison and cook over medium heat until brown. add bacon grease as needed to keep meat from getting too dry as you cook it. add spices, water or broth, tomatoes and carrots, stir well. Simmer, covered, for one hour, stirring occasionally. Do not allow meat to stick to pan. Add vinegar and cocoa powder and simmer uncovered for 20 minutes.
