My aunt Gwen was a great cook and she kept go-to, quick recipes that were always as good as her spent-all-day-making recipes. This was one of my favorites from her go-to, quick list. Ingredients

    1 lb 93% lean ground beef
    1 cup chopped onions
    1 10.75 oz can Campbell's Healthy Request Cream of Mushroom Soup
    1/4 cup water mixed with soup
    1/4 tsp salt(optional)
    1/4 tsp black pepper
    3-4 medium potatoes, thinly sliced with skin on

Directions

Brown ground beef and onions, drain.
Spray the bottom of a 2 qt glass baking dish(11x9 inch). Cover the bottom of the dish with a layer of potatoes and a layer of ground beef. Pour half of soup mixture over this. Add another layer of potatoes and ground beef, pour remaining soup mixture over this also. Bake covered for 1 hour at 350°F.
MAKES 6-8 SERVINGS

    This is really great. I made two changes. First, I added just an bit more water to the soup. Then on the last layer, I mixed the meat and onion with the mushroom soup before pouring over the potatoes. Made assembly easier. My family thought it was delicious. - 7/19/09

    I'm glad so many of you like this recipe. As I said, my late aunt Gwen introduced me to this more than 10 years ago and it's been a favorite ever since. She was a fantastic cook and I know she's smiling on us all when we enjoy this! Thanks again!

    I really liked this dish. I did add a few extras to kick it up a notch though. Some mushrooms, red peppers and a little extra seasoning. Next time I think I will use turkey sausage links sliced thin instead of ground beef. Great recipe though!! - 12/7/09

    I had to modify a bit for time - I cubed my potatoes and nuked them, added to the beef and soup mix and stirred together - finished cooking on stovetop. Did whole thing in cast iron skillet. Foil over it at the end. Edges got crispy.
    still want to try the layers way - too little time after work

    Me & my boyrfriend (who isn't tryin to eat healthy) both loved it. Some of the potatoes were a little undercooked..will prob slice the slices in half next time. For seasonings I added pepper, italian seasoning, parsley, onion powder (because I didn't add real onions), & garlic. I added corn too. YUM - 5/26/10

    My husband loved this, and he is fairly picky! I only had to use 2 whole potatoes, so I also added about 1/2 cup of fat-reduced shredded cheddar cheese in the last 5-10 minutes of baking. It was terrific! - 5/18/10
