Ingredients

4 tomato slices
6 ounces ground bison
Salt and pepper to taste
4 slices rye or wheat bread
4 teaspoons Brummel & Brown spread (or other light butter/margarine)
4 slices light Swiss cheese
Directions
1. Cook tomato rounds on griddle or pan over medium heat until tender. Remove from griddle.
2. Divide meat into two portions and shape into bread-sized patties. Season with salt and pepper. Grill to desired doneness.
3. Assemble melts: butter bread on one side; put buttered side down on hot griddle, then 1 slice of cheese followed by two tomato slices and then cooked patty, followed by cheese. Repeat this for the other patty melt.
4. Lightly butter one side of the other slices of bread and top burgers, with buttered side out.
5. Saute until bread is crisp and golden (but not burned). Flip and cook other side. Cheese chould be melted.
6. Slice on diagonal and serve. Makes 2 servings.
