Ingredients

    I pound of lean ground bison (you can use chicken or turkey if you prefer)
    1 cup cooked brown rice
    1 egg
    3/4 low fat yogurt cheese (you make from separating the low fat yogurt over night with cheese cloth in the fridge)
    1/2 cup chopped onion
    1/2 cup chopped green pepper
    1/2 cup chopped celery
    1 Tbsp soy sauce or tamari
    1 tsp crumbled dried oregano
    1 tsp sea salt
    fresh ground black pepper
    1 tsp crumbled dried basil
    cooking spray

Directions

This serves 6
1. Preheat oven 350 degrees
2. In large mixing bowl combine all ingredients with a pair of clean hands. Place in a loaf pan that has been prepared with a light coating of non-stick cooking spray. Bake for about an hour. Remove from oven and let it cool 10 minutes before cutting.

    Incredible!
    Funny I was on Oxygenmag.com looking for a ground Bison recipe without any luck, so I searched out my handy Sp recipe app and found this FANTASTIC recipe :) - I didn't have any yogurt so I used cottage cheese (Blended in a food processor) instead. I also put in a couple of crumbled Ryvita crackers. - 1/10/12
