Sometimes I make it with vegetarian protein crumbles or venison, if I can find it. Basic recipe makes a great chili, whatever your favorite protein source is. Ingredients

    1 packet Ortega Chili Seasoning
    1 can Ro*Tel Diced Tomatoes
    2 cans Hunts Fire Roasted Tomatoes
    3 cans Swanson Vegetable broth
    2 cans Dark Red Kidney Beans, drained & rinsed
    1 can Pinto Beans, drained & rinsed
    1 lbs. ground bison
    1small onion, diced
    2 medium celery stalks, diced


Directions

Brown bison with diced onions and celery. Add chili seasoning and mix well. Add tomatoes, beans and broth. Additional spices may be used according to your preference. Allow to simmer for at least a half hour to blend flavors. Serve with toppings of your choice (ie. sour cream, shredded cheese, diced raw onions, etc.)
