Introduction

Ingredients

1 lb. Ground Bison/Buffalo meat (or any extra lean ground meat)
1 can Great Northern Beans (or your favorite beans)
1 egg
1/4 C Panko bread crumbs
1 C Fresh, chopped mushrooms
1/2 C Shredded, fresh carrot
1 onion, diced
Salt and pepper to preference (or my favorite Durkee Kansas City Style Steak Seasoning)
Barbecue Sauce (to brush onto the top of each muffin)
Tips
I like to briefly cook the veggies in a tad of olive oil and then let them cool before adding them to the meat.
This recipe is a great way to plan your meals ahead and portions them out easily.
I like to serve this with a 1/2 C of brown rice (which I have pre-portioned and frozen in ziplocs) and a side salad which make the total a very satisfying meal of 250-300 calories(depending on the dressing).
Directions
1. Spray a cupcake pan with cooking spray. Preheat the oven to 375F.
2. Prepare and combine all of the ingredients except the BBQ sauce in a large bowl (mash the beans with a potato masher before adding).
3. Divide up the meat mixture into the 12 cup tray evenly. Bake at 375 for 15 minutes.
4. Top each meat muffin with a portion of BBQ sauce. 5. Allow to cook for another 5 minutes or until the BBQ sauce starts to bubble. Cool & serve.
Serving Size: Makes 12 single serving "meat muffins"
