Ingredients

    1 onion, finely chopped
    1 red pepper, finely chopped
    3 cloves garlic, minced
    2 lbs bison meat
    1 cup ketchup
    1/2 cup saltines, crushed
    1 egg white
    1 tsp Worcestershire sauce
    2 tbsp mustard (Dijon or yellow)
    1/4 tsp salt
    1/4 tsp pepper

Directions

Preheat oven 400F
Spray fry pan with nonstick spray. Add onions and bell peppers: cook , stirring occasionally. Add garlic, cook 30 seconds more. Remove skillet from heat, cool 5 minutes.

In lg. bowl, mix beef, onion mixture, 1/2 ketchup, bread crumbs, egg white, mustard, Worcestershire sauce, and S/P. Transfer mixture to baking sheet or loaf pan. Bake until 160F (45-60 minutes) . Transfer the meatloaf to a cutting board and let stand 10 minutes. Cut into 8 slices.

    OMG! So easy and so yummy! I didn't to share it. Wanted it all to myself! I just might make mini-muffin size meatloaves for a fundraiser party next month. This would be so easy to make bite-sized. - 3/26/15

    Excellent! Thank you. I substituted the 1/2 cup ketchup that gets mixed in for 1/2 cup of applesauce just to reduce the processed sugar. I still smeared the top with ketchup about 15 minutes before it was done. Also subbed oatmeal for saltines. Yummy! - 9/27/13
