This is one of our family favorites! Although it's pretty low in calories and fat (for fettuccine alfredo), it has plenty of flavor. This looks really good, too, so we make it sometimes when company comes. Hope you enjoy it as much as we do!

Substituting Mexican Creama for the traditional bechamel sauce, cuts down on the fat, calories and carbs making this a faster and easier recipe. Mexican Creama is similar to heavy cream in texture, but much lighter in flavor. I prefer to use Springer Mountain Farm organic chicken breast in the pre-portioned packs.

I found this recipe in a magazine. It has a very mild taco taste but it's still really good. I used Garden Delight fettuccine instead of reg or wheat to sneak in a veggie serving to my family.
