Ingredients

1 can navy beans (rinsed and drained)
1 can fire roasted tomatoes (with juice)
1/2lb ground bison
1 medium onion chopped
2 cloves garlic minced
1 bunch chard (mine was 1 bunch from the farmer's mkt)
3/4c low sodium chicken broth
2T cornstarch
water to mix the corn starch
Tips
This is fast, and simple. You could also use vegetable stock in lieu of the chicken broth, I just had a little leftover and added it to the pot. I did not use all of the cornstarch mixture. I just added it until it was the thickness I wanted.
Directions
1. Roughly chop chard, rinse, and drain
2. Dice onion
3. In large skillet, spray with pam. Add onion, garlic, and ground bison. Cook until done
4. Once cooked through, add tomatoes, chard, and chicken broth
5. Simmer for about 10 mins with lid on, until stalks of chard are tender
6. Mix cornstarch with roughly .25c of water to dissolve. Add to simmering mixture and bring to boil to thicken.
Serving Size: makes 4 servings (approx 1.5c)
