Number of Servings: 12

Ingredients

    Non-stick Cooking Spray
    1 cup Quaker Oats (dry, non-instant)
    1 cup 2% Cottage Cheese
    1 cup Eggbeater
    1 small banana
    40 blueberries
    1/4 tsp vanilla extract
    1/4 tsp ground cinnamon
    2 packets of Equal
    1/2 cup sugar free maple syrup

Directions

1. Lightly coat a nonstick skillet with cooking spray; place over medium heat

2. Blender oats, cottage cheese, eggbeater, banana, blueberries, vanilla, cinnamon, & equal on medium speed until smooth; approx 2 minutes

3. Pour batter, about 1/4 cup at a time onto hot skillet. Cook pancake until bubbly on top and dry around edges, approx 3 mintues. Turn and cook other side until golden, about 2 more minutes

3. Makes 12 small pancakes. Serve with warm maple syrup & fresh berries

    We didn't love this one. The middle seemed to taste of a bowl of oatmeal and a little doughy. We cooked them a bit longer and still. Also, the maple syrup is not counted in the calorie count. - 7/21/12

    Incredible!
    Yum!!! Made these this morning. Didn't put in the blueberries because it would've made the batter blue to process them. Even with "just" the banana these were SCRUMPTIOUS! I'll definitely be keeping this recipe--thank you for posting it! - 1/8/12
