Low Fat Eggplant "Lasagna"

Ingredients
1 sm. italian eggplant, unpeeled, thinly sliced lengthwise1 med. vine ripe tomato, sliced thin1 c. low fat cottage cheese1 sm. zuchini, grated1 c. prego heart smart mushroom sauce2 oz. soft goat cheese, crumbled
Directions
Spray a sm. casserole dish with Pam or alternative. Place a 1/4 c. sauce in bottom. Layer eggplant, (unpeeled and thinly sliced lengthwise) thin slices of tomato, sauce, cottage cheese, zuchini, sauce, eggplant, sauce and top with goat cheese crumbles. Cover with (vented) aluminum foil and bake for 45-55 mins. at 350 degrees.
