Ingredients
2.5 cups of mixed lentils 2 cups of chopped baby spinach1 cup of chopped cilantro1/2 tsp of turmeric3 garlic cloves finely sliced, 2 red chillis chopped, 2 tsp of ground cumin, 2 tsp of whole cumin, 1 tbsp ground corriander, 1 tbsp of black mustard seeds2 tsp olive oil
Directions
Bring all the lentils to a boil with 1/4 tsp of turmeric and 1tsp of grated ginger. Lower the heat and cook for 20 mins. Add 2 cups of chopped baby spinach and 1 cup of chopped cilantro. Cook for 10 mins. During this time saute for 3 mins the combination of these spices: 3 garlic cloves finely sliced, 2 red chillis chopped, 2 tsp of ground cumin, 2 tsp of whole cumin, 1 tbsp ground corriander, 1 tbsp of black mustard seeds. Add to the lentil mixture and add salt to taste.
