Introduction

Number of Servings: 6

Ingredients

    1 small head green cabbage, shredded
    1 cup dried green lentils, rinsed
    4 cups canned diced tomatoes
    8 cups fat-free chicken broth
    1-1/2 to 2 tbsp ground cumin
    1 tbsp virgin olive oil
    1 lb. (5 to 6 medium) carrots, sliced thin
    1 small white onion, diced
    green onions, chopped for topping

Directions

Place all ingredients except the green onions into a large stock pot. Stir and bring to a boil over high heat. Lower heat to low and let simmer until vegies are soft ( about 1 hour). Stir every 15 minutes to prevent lentils from sticking to bottom of pot.
Ladle into bowls, top with onions.
Makes 6 2-cup servings or 12 1-cup servings.
Add salt, pepper or other seasoning if desired.

    This is a wonderful recipe and very filling! It makes a lot of soup so plan to either cut the recipe in half or freeze leftovers. - 3/24/09
