This healthy, hearty salad is packed full of fruit AND vegetables.
This recipe came from the chicken enchilada recipe I submitted earlier. I didn't need to make that many chicken enchiladas, so I made this up to make a slightly different meal. I used the remaining sauce from the chicken enchilada recipe, then added the remaining chicken and added the chicken broth.Submitted by SKEYDOO
This recipe technically makes a single serving, but it's a generous one by my standards (about 15 shrimp) It's so quick and easy, but packs some serious spice! Very tasty and low cal--you can have this with a salad or have a yogurt and blueberries for dessert--nice mid day meal on a cold day and quick to make.
