Introduction

Ingredients

    2 cups brown lentils
    1 cup black lentils
    1 cup red lentils
    1 stick butter, unsalted
    1 head garlic ground and an equal amount of ginger
    3-5 Tbsp Garam masala (an Indian spice)
    1 cup whole milk

Directions

Soak brown and black lentils overnight.
Rinse lentils and put in a large sauce pot. Add red lentils, cover with water, bring to a boil, then simmer.
Finely chop or grind a head of garlic and an equal amount of ginger. Mix with Garam Masala.
In a saute pan, melt butter, add spice mixture, and cook over medium flame, stirring constantly, until it browns.
Mix browned spice mixture into lentils and continue to simmer 30-40 minutes. Add Milk.
Continue to simmer another 20 minutes or until lentils reach the desired firmness. Some should be falling appart while others should still be slightly crunchy.
Serve with rice or naan or pita.

    Just like the rating indicates, this soup is incredible! So authentic! I used all 5 tbls of garam masala and added freshly minced cilantro - perfect complements. Will add this to my menus regularly. It's just THAT GOOD!! - 9/29/07
