Quick and easy appetizer or side dish. It's as good or better than fried zucchini but with way fewer calories. I change mine up with a dash of different seasoning blends which are not included in the actually recipe.

Danny Seo's Zucchini Pizza Bites

This is a really delicious and easy recipe. I made it for an "Italian Feast" themed party and it was a big hit! It's nice to find something to throw together and not have to shop for unusual ingredients.

I am not sure where this recipe originated but it was a real hit with friends and family. You can add cayenne pepper or jalapenos to spice it up a bit. But drain the peppers because the zucchini is moist enough without additional liquid.
