Introduction
Quick and easy appetizer or side dish. It's as good or better than fried zucchini but with way fewer calories. I change mine up with a dash of different seasoning blends which are not included in the actually recipe. Quick and easy appetizer or side dish. Ingredients

2 Zucchini, medium, cut into 1/4 inch slices
1/2 cup Bread crumbs, plain
2 Tbsp. Grated parmesan cheese
1/8 tsp. Black pepper
2 Eggs, (whites only)
Dash of your favorite seasoning to taste
Pam Cooking Spray
Directions
Preheat the oven to 475 F.
Coat cookie sheet with Pam Cooking Spray.
Blend bread crumbs, parmesan cheese, and black pepper. Add a dash of your other seasonings now to taste. (ex. oregano, garlic, basil, etc.)
Place egg whites in a separate bowl.
Dip zucchini slices into egg whites, coat with bread crumb blend and place on cookie sheet.
Bake for 5 minutes, flip and bake for an additional 10 minutes until browned. Oven baking times may vary.
Makes 4-5 servings. Nutritional information based on 5 servings.
Note: I do one egg white at a time as the bread crumb mixture tends to start clump toward the end. Using one at a time gives me a cleaner mixture to dip in.
