Ingredients



    Salt, 0.50 tsp
    Vanilla Extract, 2 tsp
    Applesauce, unsweetened, 0.50 cup
    Banana, fresh, 2 medium
    Zucchini, 2 cup, sliced
    Walnuts, 0.50 cup, chopped
    Baking Soda, 1.50 tsp
    Cocoa, dry powder, unsweetened, 0.50 cup
    Granulated Sugar, 1.50 cup
    Flour, white, 2 cup

Tips

I used a non stick dark metal muffin pan.


Directions

1. Preheat oven to 350 F
2. Peel and finely shred 2c. zucchini
3. Spray mini muffin pan w/cooking spray
4. Combine applesauce, bananas & sugar in large bowl
5. Add vanilla and cocoa & mix
6. Add baking soda, salt & zucchini & mix
7. Add flour & walnuts and mix
8. Pour evenly into mini muffin pan
9. Bake approximately 20 minutes until brownies spring back when touched
10. Let cool 3-5 minutes in pan before transferring to cooling rack.
Makes approximately 42 mini muffin sized brownie bites.
