    1 block soft or silken tofu
    1 cup chocolate chips, melted w/ 1 Tablespoon water
    1/4 cup soy milk
    1/4 cup white sugar
    1 tsp vanilla extract
    1 Graham cracker pie crust


*Vegan if chocolate & pie crust are vegan.

Blend tofu, melted chocolate chips, soy milk, sugar, and vanilla until smooth. Pour into pie crust.

Bake 20-30 minutes at 350F, until top is set.

    This is an amazingly good pie. People never even know what's in it or that it's reasonably good for you. Also very good for parties if someone is vegan/lactose intolerant.

    But most importantly, very tasty.

  • The only thing better than the simplicity is the taste.I also like adding a little something extra (shaved coconut,or a swirl of my favorite nut butter) - 9/15/09
