Introduction
This is a really delicious and easy recipe. I made it for an "Italian Feast" themed party and it was a big hit! Ingredients

3 cups thinly sliced zucchini (about 4 small zucchini)
1 cup Bisquick mix
1/2 cup (1 medium) finely chopped onion
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
1/2 teaspoon salt
1 tablespoon Mediterranean Sea Salt
1/2 teaspoon dried oregano
Pepper to taste
2 clove garlic, minced
1/2 cup olive oil
4 eggs, beaten
Directions
Preheat oven to 450 degrees F.
Spray a 13 x 9-inch baking pan with Pam.
Start with 4 beaten eggs. Combine all of the other ingredients and spread in the pan.
Bake until golden brown, about 25 minutes.
Cut into 2x2-inch squares and serve.
Makes about 22.
