Number of Servings: 8

Ingredients

    lb ground Italian sausage
    1 tsp crushed red peppers
    1 large diced white onion
    4 tbsp bacon pieces
    2 garlic cloved, crushed
    8 cups fat-free chicken broth
    1 cup skim milk
    3 large potatoes
    2 cups chopped kale

Directions

Sautee Italian sausage and crushed red pepper in pot. Drain excess fat, set aside while you prepare other ingredients. In the same pan, sautee bacon, onions and garlic for approximately 15 mins. or until the onions are soft. Add the chicken broth to the onions, bacon and garlic. Cook until boiling. Add potatoes and cook until soft, about 10-15 minutes. Add milk and heat though. Stir in the sausage. Add kale just before serving. Delicious!

    I wanted to make sure that this one got the love it deserves. We had this last night and it was hands down a winner. Everybody loved it and it fed 6 people two being growing boys. We did add a little more crushed red pepper simply because we all have colds and it was a good way to open it all up! - 12/10/09
