Introduction

I am not sure where this recipe originated but it was a real hit with friends and family. You can add cayenne pepper or jalapenos to spice it up a bit. Ingredients

    3 Cups grated or shredded zucchini
    1 Cup Bisquick
    1/2 cup fresh shredded or grated Parmesan cheese
    2 tbsp. chopped fresh parsley
    1/4 - 1/2 tsp oregano or Italian blend
    1/2 tsp salt
    1/2 ground black pepper
    4 eggs lightly beaten

Directions

Preheat oven to 350. Line a 9x13" pan with foil (or use pyrex that is coated with cooking spray). Combine all ingrediants in large bowl and mix vigorously with wooden spoon until combined. Spread in prepared pan and bake approximately 25 minutes until golden brown.

Let cool for 10 minutes. Cut into 32 squares. Transfer from pan to serving platter. Serve warm or at room tempature.
