    1 Graham Cracker square (any type will do I use the Fat Free)
    50 g of Cream Cheese
    1 tbs strawberry preserve

Directions

On the Graham Cracker square thinly spread the Cream Cheese. Top with strawberry preserve and enjoy your....cheesecake!

    I'm a big fan of this "cheesecake" recipe and have been enjoying a version of this for many years. I use a Digestive biscuit, Light Philadelphia cream cheese (or Extra Light) and a tablespoon of sugar-free diabetic strawberry jam - superb! - 2/24/09

    I used ricotta cheese with a couple drops of almond flavoring mixed in, instead of the cream cheese. Then I topped it w/ sliced fresh strawberries. It was wonderful! Thanks for the idea! - 2/2/09

    I used one ounce of neufchatel cheese and one tablespoon of Polamer's Cherry All Fruit Spread. Then I took two sheets of graham crackers and broke them in half. I spread the cheese and fruit spread over two halves and topped with the other halves for a sandwich.
    Yummy!
