Introduction

Much healthier than fried zucchini, these crispy little bites make a yummy snack or side dish! Much healthier than fried zucchini, these crispy little bites make a yummy snack or side dish!

Ingredients

    2 medium zucchini, cut into 1/4-inch slices
    1/2 cup seasoned bread crumbs
    1/8 tsp black pepper
    2 tbsp grated parmesan cheese
    2 egg whites

Directions

1. preheat the oven to 475-500 F (depending on your oven).
2. In one small bowl, stir together the bread crumbs, pepper, and parmesan cheese. place the egg whites in a separate bowl.
Dip the zucchini slices into the egg whites, then coat in the breadcrumbs. Place on a greased baking sheet.
3. Bake for 5 minutes in the oven, then turn over and bake for another 5 - 10 minutes, until browned and crispy.

    These were great. I halved the recipe because I only had 1 zucchini. I added some onion powder & a garlic/parsley salt blend. My hubby grilled some which came out really good & I baked some. The ones he grilled were crispier than the baked ones. Very, very good. Need to buy more zucchini! - 10/7/09

    I love this but found the egg whites will stay on better if zucchini is first dipped in flour. Then the bread crumbs will stick better. - 2/16/12
