Hot Chickpea Salad

Ingredients

1/2 onion, chopped3 cloves garlic, minced2 cups chickpeas, rinced and drained2 cups frozen peas1.5-2 cups mushrooms, chopped1/2 cup tomato sauce1/2 cup salsa1 tsp cumin1 tsp paprika2 tbsp seasoned rice vinegarsalt and pepper to taste
Sautee the onions and garlic in a bit of water for about 5 minutes until soft.
Add chickpeas, peas and mushrooms. Mix frequently until peas are thawed and cooked, about 10 minutes.
Mix in tomato sauce, salsa and vinegar. Season with spices and stir until fully mixed.
