Eggplant Lasagna

Ingredients
1 lb. ground turkey1/2 c. onion, chopped1/2 c. green pepper, chopped1 c. mushrooms, sliced1 large eggplant slice 1/4 in10 oz. frozen spinach, thawed & drained1 c. ricotta cheese1 lg. egg2 c. mozzarella cheese3 c. spaghetti sauce3 cloves garlic, mincedsalt & pepper to taste
Directions
In saute pan heat oil, add onions, peppers and garlic cook over med. heat until tender, add turkey, cook till no longer pink, drain fat and set aside. Beat egg, add ricotta and 1 1/2 c. mozzarella cheese and spinach, mix together. In 9x13 baking dish layer sauce, eggplant, sauce, turkey, sauce, eggplant, sauce, cheese mixture, eggplant, sauce. Cover and bake at 350 degrees for 45 minutes. Uncover, sprinkle left over mozzarella cheese over top and bake for another 5-10 minutes. makes 8 servings
