Apple Cake (Low fat) (Low Sugar)

3 cups Apples peeled and chopped3 cups Cake Flour1/2 cup Coconut1 cup chopped Walnuts2 cups Splenda3/4 tblsp Cinnamon1 tsp Vanilla flavoring1 1/2 cups Unsweetened Applesauce3/4 cup Eggmates
Preheat oven to 350. Spray a tube pan with nonstick cooking spray.
Mix all ingredients together and pour into a tube cake pan. Bake at 350 degrees for 1 hour 15 minutes
Note: I sprinkled a little Splenda and Cinnamon with a few chopped walnuts in bottom of pan before pouring in mix. This gives you a nice topping without the fat.
