European Apple Pancake (Spelt)

2 Tbsp of Butter2 Apples1/4 Cup of Splenda Brown sugar blend2 Tsp of Cinnamon6 Large Eggs1 Cup of Milk1 Cup of flour (I use Spelt flour, a great wheat alternative)1 Tsp of Xanthan Gum (omit if using wheat flour)1/4 Tsp of salt
Preheat oven to 450 F. In a 9 x 13 baking dish spread butter to coat the bottom and part way up the sides. Place a layer of apple slices to cover the whole bottom of the pan. Sprinkle with Splenda Brown sugar blend and Cinnamon.
Bake for about 10 minutes or until the apples are soft.
While apples are cooking. Beat eggs in a bowl until frothy and then add the rest of the ingredients.
Pour egg mixture gently into hot pan with apples and return to the oven for 15 minutes or until the pancake puffs up evenly.
Serve immediately with syrup.
Makes 8 servings (but my husband has 2 or 3 servings :) ).
