Banana Cream Pastry

1 Instant Vanilla Pudding Mix3 cups skim milk1 tub light Cool Whip (thawed overnight)60 or so soda crackers (like Premium Plus)3 medium bananas sliced
Makes sixteen 2x2" servings
1. In a large bowl, whisk pudding mix and milk for 2 minutes until it thickens. Fold in Cool Whip
2. Add 1 layer of crackers to the bottom of a 9x13 cake pan. Cover with half of the vanilla mix. Top with another layer of crackers. Spread other half of vanilla on top.
3. Cover and refrigerate for 4 hours to allow crackers to soften. Top with a layer of sliced bananas and serve.
