Sourdough Pancakes (no starter needed)

Ingredients
Warm Water, 2 cups Yeast, bakers, 1/4 tsp or 1 packageFlour, 2 cupsEggs, 2 large Sugar, 1 TbspBaking Soda, 1 tsp Salt, 1 tspCanola Oil, 2 tbsp
Directions
Never use a metal dish or spoon (it kills the yeast).
The night before:
- Combine the warm water, yeast, and flour and mix well. The mixture will rise, so use a bowl with extra room.
- Warm the oven at the lowest temperature. Turn off the oven and put the dish in the oven overnight.
In the morning:
- Add to the mixture the eggs, sugar, baking soda, salt, and oil and mix well.
- Allow mixture to rise for 30 minutes.
- For an average sized pancake, pour ~1.4 cup of batter into a hot skillet.
- Cook over medium heat for ~2 minutes per side, flipping when the edges begin to form on the pancake.
