Pam, onion, garlic, eggplant, red peppers, mushrooms, zucchini, stewed tomatoes, chicken broth, chick peas,parsley, oregeno
spray pan with pam. Saute onion and garlic till soft. Add eggplant..raise heat and cook eggplant till brown.
Lower flame add all the veggies, tomatoes, broth, chick peas and seasonings, cover and cook on low for about 1/2 hour or till desired doneness.
Makes 6 1 cup servings.
