Oma'z Porcupine Pork Tenderloin

Ingredients
1 pork tenderloin, trimmed of fat2 oz cheddar cheese, cut into 1-inch x .25-inch sticks1 tbsp paprika1 tsp ground black pepper1 tub low fat sour cream1 tsp dry gravy mix
Directions
Preheat oven to 375 degrees F. Trim fat from tenderloin. Mix paprika and ground pepper and rub all over tenderloin. Make holes in the tenderloin with a knife and place one stick of cheddar cheese into each whole until the tenderloin looks like a porcupine. Brown tenderloin in butter in a large skillet (cheese will melt). Remove tenderloin to an oval casserole disk. Add 1 tub low-fat sour cream to the skillet and mix with juices. Add 1 tsp dry gravy mix and stir well. Pour sour cream gravy over the tenderloin. Cover casserole and bake for 45 minutes. Cut into 1/4 inch pieces and serve over mashed potates, rice or spaetzle. Stir and pour the hot gravy over the sliced tenderloin or on the side in a gravy boat.
